Fleming’s Prime Steakhouse
Project Overview
Elevating the Private Dining Experience with Scalable, Standardized AV
Standardized, Remotely Supportable AV Across 15+ Fine Dining Private Meeting Locations
Fleming’s Prime Steakhouse & Wine Bar, a premium concept under the Bloomin’ Brands portfolio, set out to transform its private dining rooms into fully capable, high-end meeting spaces tailored to the pharmaceutical and medical industries. These clients demand a level of reliability, discretion, and professional capability far beyond standard restaurant AV — requiring presentation-ready spaces, seamless video conferencing, and crystal-clear audio reinforcement in an upscale dining environment.
Crunchy Tech was selected to design, engineer, and deploy a standardized AV solution that could be implemented consistently across Fleming’s locations nationwide. The goal was not just to serve one restaurant, but to establish a repeatable, remotely supportable platform that could scale across the entire brand footprint — ensuring every location delivered the same premium meeting experience.
Project Challenges
Designing for Flexibility, Scale, and a High-End Clientele
The Fleming’s project presented a distinctive set of challenges that went well beyond a typical restaurant AV installation:
- The AV system needed to serve a clientele with professional-grade expectations — pharmaceutical and medical industry groups hosting large-scale private meetings that required reliable video conferencing, polished presentation capabilities, and broadcast-quality audio reinforcement.
- Each location needed to support both independent room use and combined configurations, with the private rooms able to function individually or merge into a single large space at the touch of a button — without any degradation in audio quality or AV functionality across configurations.
- Audio design required particular precision. Gain structure had to be meticulously calibrated across all microphone inputs and speaker outputs, with all levels set to metered standards to eliminate any possibility of feedback, clipping, or inconsistency during high-profile client meetings.
- The solution had to be standardized and remotely supportable, enabling Crunchy Tech to manage and troubleshoot any location across the country without requiring an on-site technician for routine support.
- The premium dining environment demanded that all technology integrate seamlessly into the aesthetic — with no compromise to the ambiance Fleming’s is known for.
Understanding Client Needs
A Companywide Platform Built for Private, High-Stakes Meetings
Bloomin’ Brands’ core requirement was standardization. With Fleming’s locations operating across the country, the company needed every private dining room to deliver an identical experience — one that a pharmaceutical sales team or medical board could rely on regardless of which location they visited. This meant establishing a single, proven system architecture that could be replicated at scale.
Equally important was operational simplicity. Restaurant managers and staff needed to be able to reconfigure rooms, launch conferencing sessions, and manage audio zones without dedicated AV expertise. The system had to be powerful under the hood, yet distilled into an interface simple enough for any team member to operate confidently before a client arrived.
Crunchy Tech approached the engagement by first conducting a thorough assessment of the space and its performance requirements — understanding the range of meeting sizes, the nature of content being presented, and the audio demands of room combine scenarios. This upfront analysis informed every design decision that followed, ensuring the system was neither overbuilt nor underpowered for the environments it needed to serve.
Technical Solutions
Conferencing, Audio, Distribution, and Intelligent Room Combine
To deliver a premium, scalable meeting environment across Fleming’s locations, Crunchy Tech integrated a multi-layered AV system combining enterprise video conferencing, AV over IP distribution, professional audio, wireless microphones, and centralized control with room combine automation.
| System Category | Components | Role in Project |
| Video Conferencing | Cisco Room Kit with peripherals, Cisco Touch 10 touchpanel | Delivered seamless video endpoints with an intuitive, unified operator experience |
| AV over IP Distribution | Just Add Power video distribution system (AVoIP) | Routed video signals from the Cisco codec, DirecTV boxes, and laptop input plates to all commercial monitors; also served as content ingest for the codec |
| Audio DSP & Amplification | QSC Q-SYS audio environment, DSP, amplifiers | Managed digital signal processing, gain structure, metered levels, and audio throughput across all speaker types in private rooms |
| Wireless Microphones | Shure Wireless Micro Flex system | Provided wireless mic capability for both voice-lift within the room and microphone reinforcement to the codec during room combine configurations |
| Control & Automation | Crestron 4-Series control processor, Cisco Touch 10 GUI | Unified all automation and room-combine logic into a compact, easy-to-use interface; reduced operator complexity for single-touch room configuration changes |
| Room Combine System | Partition-based independent and combined room configurations | Enabled one large unified space, three individual private rooms, or any combination — each maintaining full AV functionality and audio quality |
The room combine architecture was a particularly critical element of the design. Using the Crestron 4-Series processor and QSC Q-SYS DSP in concert, Crunchy Tech engineered a system that allows the management team to transition between one large unified space, three fully independent private rooms, or any intermediate configuration — with a single button press on the Cisco Touch 10 panel. Each configuration maintains full audio quality and AV functionality, with the DSP dynamically rerouting signals and rebalancing levels to match the active room layout.
Just Add Power’s AV over IP platform served as the video distribution backbone, routing content from the Cisco Room Kit, DirecTV boxes, and laptop input plates to the appropriate commercial monitors in each room configuration — providing the flexibility to send any source to any display without complex matrix switching.
Implementation Methodology
Standardized Design-Build for Nationwide Rollout
The Fleming’s deployment was executed through Crunchy Tech’s integrated design-build methodology, which was adapted specifically for multi-location rollout. Rather than treating each restaurant as a standalone project, Crunchy Tech developed a master system architecture that could be templated and deployed consistently across every location — ensuring identical performance, identical control interfaces, and identical remote support capabilities at every Fleming’s site.
Each installation began with a site-specific assessment to confirm room dimensions, partition placement, ceiling heights, and infrastructure pathways. While the system architecture remained standardized, physical installation details were adapted to each location’s unique layout. Audio calibration was performed at every site using gain structure best practices — with all input and output levels professionally metered and set to eliminate any risk of audio issues during client meetings.
Remote supportability was built into the system architecture from day one. Network configuration, device addressing, and control system programming were all structured to allow Crunchy Tech’s team to diagnose and resolve issues from a central support location, minimizing the need for on-site service calls across the national footprint.
